Storage Tip
Avocados brown easily so it is best to make this recipe and enjoy it while it is fresh. If you do need to make it ahead of time or have leftovers, storing it in the fridge in an airtight container with 1-2 avocado pits can help reduce the browning.
Nutrition Note
This recipe is packed with incredible nutrition. Avocados contain omega 3 fatty acids which act as an anti-inflammatory in the body and are important for brain, eye, heart, and mental health. Avocados also offer a source of iron, but it is not super absorbable. However, the vitamin C in the lime juice and Tomatoes helps the body absorb the iron, making these foods a great team! Tomatoes also offer lycopene which is an antioxidant that helps reduce the risk of some types of cancers. The olive oil helps the body use the lycopene effectively. So, yes, this recipe is a powerhouse of nutrition. How amazing that it tastes great too?!
Serving Tip
Serve with your favorite vegetables and whole grain crackers or chips.
Time Saver Tip
To save on time you can dice the Tomatoes, onions, and garlic ahead of time and store them in the fridge. Then, when you make the guacamole just mash the avocado and combine the rest of your ingredients!
