Steps
- Heat olive oil in a large sauté pan over high heat.
- Add corn (fresh or frozen) to the pan once oil is hot.
- Sauté for 2-3 minutes or until lightly browned.
- While searing corn, combine Mixed Grape Tomatoes, Bell Peppers, olive oil, Italian parsley, and lemon juice in a mixing bowl.
- Once corn is seared add to bowl and mix well.
- Place greens on a plate and top with mixture.
Chef’s Tip: You can substitute the corn with green beans for fewer carbohydrates.
