- Wash all produce before preparing.
- Mix together vinegar, sugar, mustard, and olive oil. Set aside
- Core and slice the pear into thin slices, leaving skin on for color and flavor. Slice Cucumber into rounds.
- Slice the onion and Bell Pepper, and then add all of the ingredients into a bowl with the dressing and spring mix. Toss to coat.
For a little Asian flare, substitute the olive oil and vinegar with sesame oil and fresh lime juice and garnish with toasted almonds.
