- Toss tomatoes in olive oil with salt, pepper and garlic.
- Place in a baking dish and bake at 350 degrees for 30 minutes or until tomatoes split and start turning golden brown.
- Transfer tomatoes into a food processor. Add vinegar and puree the mixture.
- Chill until ready to serve.
NOTE: use extreme caution when blending hot mixtures. Always place a dish cloth on top of the blender lid.
Chef’s Tip: Works well as a cold pasta sauce.
