Steps
- Add one tbsp. of olive oil to a preheated non-stick pan over medium high heat.
- Add zucchini, mushrooms, diced garlic, peppers, tomatoes and broccoli to the pan.
- Sauté for 3-4 minutes, season with salt and pepper.
- In a large bowl add spinach, warm pasta, and 1oz. of feta cheese.
- Mix well and combine the sautéed vegetables.
- Serve on a large platter and drizzle with remaining olive oil.
- Season with salt & pepper.
