- Bring water, hibiscus, sugar, cinnamon, and 1 cup of strawberries to a boil, in a medium saucepan, for 5 minutes.
- Remove mixture from heat and let cool for 10-15 minutes.
- Strain the mixture and discard the hibiscus flowers and strawberries.
- Once the liquid is completely cooled, pour into a pitcher with ice. Then add the fresh mint leaves and the remaining ½ cup chopped fresh strawberries. Stir gently.
- Pour into glasses. If desired, garnish with mint and a strawberry.
