- Wash and core the red Bell Peppers and cut them into wedges. The wedges will serve as your scoops that you can eat your salsa with.
- Combine the rest of the ingredients into a mixing bowl, mix well and place the bowl into a fridge for 30 minutes.
- Pour the mixture into little dishes and add a Pepper wedge to scoop up your quinoa salsa.
