- Wash all produce.
- Place Tomato wedges, sliced onion, and hearts of palm in a bowl.
- Add dressing and toss all ingredients together. Serve as is or on a bed of mixed greens.
Tomatoes are full of vitamin C and lycopene – these are both antioxidants that help reduce the risk of acute and chronic illnesses.

To make this salad into a meal, try adding diced tofu, roasted chickpeas, black beans, and/or sliced chicken breast and a side of whole grain rice, quinoa, and/or crusty bread!
