- Peel and core pineapple, slice into ¼ inch slices.
- On a preheated grill lay pineapple and grill each side until the sugars start to caramelize, about 2 minutes per side.
- Remove from grill and allow to cool for a minute then cut into bite size pieces.
- Add to a bowl along with the rest of ingredients mix well.
- Let stand for a few minutes before serving.
