- In a pre-heated nonstick pan add onions, tomatoes, garlic and your seasoning of choice.
- Sauté for 2 minutes, then add spinach.
- When spinach is fully wilted, remove from heat
- Stir the mixture very well in a large bowl.
- Remove the stem from mushrooms, then stuff mushrooms with filling.
- Bake stuffed mushrooms at 350 degrees F for 15 minutes.
- Garnish with Parmesan cheese.
Chef’s tip: You can substitute Parmesan for mozzarella to reduce salt.
