Steps
- Cook chicken in a non-stick skillet at medium heat for 10 minutes; once cooked, mince.
- Dice Red Bell Pepper and Mini Cucumber. Mix Bell Peppers, chicken breast, pineapple, mayonnaise, mustard and lime juice together in a bowl. Set aside.
- Place diced cucumbers on bread slice then add 1/2 cup of the filling on each sandwich. Top with another slice of bread.

Chef’s Tip:To reduce carbs, serve on a bed of fresh greens as opposed to whole grain bread.
