- Heat oil in medium sauce pan over medium-high heat and cook red onions. Stir frequently for approximately 4 minutes.
- Stir in chili powder and shredded chicken.
- Add diced Beefsteak Tomatoes and chicken broth.
- Stir well and bring to a boil over high heat. Once boiling reduce heat to low and simmer, stirring occasionally for 15 minutes.
- Serve in 6-8 bowls.
- Top and garnish with tortilla chips, cilantro and cheddar cheese.
Chef`s Tip: Substitute chicken with beef and shrimp.
